A photon torpedo was a type of torpedo weapon fielded by many species in the galaxy. It consisted of pods of deuterium and antimatter, held and temporarily separated by a forcefield until remote-detonated or detonated on impact. (The Making of Star Trek)
The first photon torpedoes were successfully fired from the Moskva-class USS Gato (NCC-387) in 2214. (The Starfleet Museum: Museum Timeline)
Starfleet used photon torpedo casings as coffins. (Star Trek II: The Wrath of Khan)
In the 2370s, the Type-II was the standard photon torpedo used by Starfleet and had a yield of 18.5 isotons. The Type-IX was nearly as common as the type II but had a higher yield of 25 isotons. Some models, such as the advanced Type-VI could have a yield as high as 200 isotons. (Spacedock: The Advanced Starship and Construction Manual)
