Canon
In the movie (Star Trek III: The Search for Spock) the Chief medical officer of USS Grissom (NCC-638), was never seen. It is known that he/she perished aboard the USS Grissom (NCC-638) when it was destroyed in orbit of the Genesis Planet in the year 2285 by the hand of Klingon Commander Kruge.
Non-canon
In the online fan novel, Star Trek Grissom, the Chief medical officer of the USS Grissom (NCC-638) is identified as Andorian Vindizhei S'Raazh. Vindi was Andorian and suprised both her friends and family with her wish to pursue medicine with Starfleet. Her brother Thirishar entered Starfleet a few years before Vindi and pursued a career in security.
Vindi was well liked and respected by all of the crew of the Grissom, and was very capable of 'handling' the by the book gruffness of Esteban.
