Canon
The Chief medical officer of USS Grissom (NCC-638) was never seen. It is presumed that he/she perished aboard the USS Grissom (NCC-638) when it was destroyed in orbit of the Genesis Planet in the year 2285 by the hand of Klingon Commander Kruge(Star Trek III: The Search for Spock).
Non-canon
The Chief medical officer of the USS Grissom (NCC-638) is identified as Andorian Vindizhei S'Raazh (Star Trek Grissom). Vindi was Andorian and suprised both her friends and family with her wish to pursue medicine with Starfleet. Her brother Thirishar entered Starfleet a few years before Vindi and pursued a career in security.
Vindi was well liked and respected by all of the crew of the Grissom, and was very capable of 'handling' the by the book gruffness of Esteban.

Background notes
- Star Trek Grissom is a fan fiction series written by Melissa Wilson and SP Teeling,who are based in Dublin, Ireland. The series uses main canon Trek characters sparingly and develops canon characters seen in (Star Trek III: The Search for Spock)who were not developed.
